This is what I make when hubby misses the UK (very rare) and it only needs one pan.
boil some potatoes (I leave skin on as it crisps well) until they are soft but not falling apart, drain, chop up and throw in a big pan or wok with some hot oil (I use rapeseed as it makes stuff golden at high temperatures). Chop up small some corned beef (I keep a can in the cupboard) and one onion and pop it in with potatoes. Fry until golden and then add things you particularly like and have in the cupboard ….so tonight I added: chopped garlic, chopped chillis, black pepper. Then serve onto plates and sprinkle with some grated cheddar so it’ll melts over the top. We also like HP sauce on the side.
